I am in love with this. Millionaire shortbread is a deliciously addictive treat. I sometimes make the chocolate topping with milk chocolate, I hope you enjoy this.
Ingredients:
SHORTBREAD:
3/4 cup (1 1/2 stick) unsalted butter, room temperature
1/4 cup granulated white sugar
1/2 teaspoon pure vanilla extract
1 1/2 cups all purpose flour
1/8 teaspoon salt
CARAMEL FILLING:
1 can sweetened condensed milk
CHOCOLATE TOPPING:
8 ounces semi-sweet chocolate cut into pieces
1 teaspoon unsalted butter
Preheat oven to 350*and place rack in center of oven. Spray a 9x9 pan with cooking spray.
Shortbread
- In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy.
-Beat in the vanilla extract.
-Add the flour and salt and beat until the dough just comes together.
-Press onto the bottom of your greased pan and bake for about 20 minutes, or until pale golden in color.
-Remove from oven and cool while you make the filling.
Caramel filling
-Pour the entire can of sweetened condensed milk in a heatproof bowl and place over a pan of simmering water.
-Cook for 60 minutes over low heat stirring occasionally. When the milk has thickened and turned a caramel color remove from heat stirring until smooth.
-Pour over shortbread and put in refrigerator to set.
Chocolate topping
-Melt chocolate and butter in a heatproof bowl over simmering water.
-Pour over caramel filling and let set
Cut with a sharp knife
Store the shortbread in the refrigerator.
